Brendan is quite obviously Irish and verra proud of the fact!
A jolly soul he is and so in his jolly old nature he wanted to celebrate his 40th in good old Irish style at the Shannon Hotel in Chippendale.
This cake was inspired by his heritage and the Irish hat (the actual cake) sits proudly alongside a pint of guiness and a leprechaun sitting in his pot of gold at the end of the rainbow.
I am sure that this cake was completely reflective of his evening .... and many more guinesses were thrown back!
The lucky leprechaun and the pint of guiness (the guiness and the pot of gold are hand carved styrofoam covered in fondant).
